Singapore is home to one of the most vibrant street-food scenes on the planet, with over 1,000 hawker centres and more than 100,000 individual stalls packed into a tiny island nation.
🚩 Hawker stalls in the spotlight
Since the 1800s, hawker food thrived on being affordable, fast, and delicious. But when the Michelin Guide Singapore launched in 2016 everything changed.
That year, Hawker Chan made history as the world’s first Michelin-starred street-food stall. The fame was groundbreaking, but triggered rapid franchising, rising prices, and intense pressure to meet demand. Eventually, Hawker Chan lost its star in 2021.
In the 2025 Bib Gourmand list, 89 budget eateries have earned recognition, showing that excellence in cheap eats is still thriving. But locals remain divided. While the spotlight has boosted incomes and global respect, it has also fuelled long queues and tourist crowds, turning once-casual stalls into must-visit destinations.

TODAY’S RECIPE
🍲 Rice Cooker Hainanese Chicken

Serves: 2
⏱️ 45-50 minutes
Ingredients 🥢
2 chicken thighs, boneless & skin on
300 g jasmine rice
5 cloves garlic, minced
3 slices fresh ginger
2 scallions, cut into large pieces
2 tsp sesame oil
½ tsp salt
500 ml warm water
4 tsp chicken bouillon powder
¼ tsp ground turmeric, for color
Cucumber slices for garnish
Dipping sauces (home-made or store-bought)
Instructions 👩🍳
1. Season the chicken 🍗
Rub the chicken thighs with sesame oil and salt.
Set aside while you prepare the rice.
2. Prepare the rice 🍚
Mix warm water, turmeric and chicken bouillon powder and make sure there are no clumps.
Rinse the jasmine rice until the water runs mostly clear.
Add the washed rice to the cooker pot, as well as minced garlic, ginger slices, scallion pieces, and chicken broth.
Then place the seasoned chicken on top.
3. Cook everything together 🍲
Place the seasoned chicken on top of the rice.
Set the rice cooker to quick mode and click start.
In the meantime you can prepare your own dipping sauces.
5. Serve & enjoy 😋
Once your rice cooker is done, take the chicken out and cut into slices.
Plate the rice alongside the chicken and cucumber slices.
Serve with ginger-scallion sauce and chili sauce.
Quick Sauce Options💡
🫚 Ginger-Scallion Sauce
In a small pan heat up 3-4 tbsp oil until almost smoking.
In a small sauce dish, add 1 tbsp minced ginger 1,5 tbsp minced scallion and salt to taste.
Pour over the hot oil and mix well.
🌶️ Chili Sauce
Mix together 1 clove minced garlic, ½ tsp sambal, ½ tsp sriracha, 1 ½ tsp chicken broth, ½ tsp lime juice, and ½ tsp sugar and mix well.
